5 Fall Soups That'll Warm You Up!

     October needs to slow down already! I've already really been trying to soak up every bit of Fall lately, because before I know it, Christmas will be upon us. I can practically hear you saying, "Dang girl, slow down it's not even Halloween!" but I think we ALL know that Christmas is going to come so much sooner than we all would like, since many stores are a juuust a little bit eager when it comes to hauling out the fake trees, festive decor, lights and ornaments. Our first pumpkin patch trip of the season is on the calendar for this weekend, and I am SO excited to take Ezra along to experience one of Jack and I's favorite Fall traditions. He's a tad too small to enjoy carving pumpkins and drinking apple cider, but I'm already excited to start making these sort of memories as a family of three.

      Although the weather hasn't quite gotten into the spirit the way many of us have already (considering we still have our A/C running and it's mid-October), I've gone ahead and tried my best to ring in the season by getting a few of my fall decorations up and indulging in some of my favorite foods and drinks of the season. Big Dog Coffee, one of my favorite coffee shops in Pittsburgh has a seriously delicious pumpkin spice latte. Another local shop, Commonplace Coffeehouse, is where I found the most delicious apple cider donut I've had yet.

     By way of Fall foods, I LOVE making soup - any time of the year, really - but enjoying a piping hot bowl of soup in October just feels so right, you know? No matter what time of year it is, I keep coming back to the same soup recipes because of their hearty goodness and the fact that it's just one of the most comforting meals you can have, in my opinion! In this post, I've put together some of my most favorite soup recipes - some of which I concocted all on my own, and others I've stumbled upon while browsing Pinterest and other blogs. Enjoy!

Side Note:
I am currently in a love/hate relationship with my crock pot, so I've been using my dutch oven to make all of these recipes, and I actually love it! If you're worried about the convenience factor in cooking on the stove, just know you may only need to step away once or twice just to stir, or reduce the heat and simmer. Some of these recipes include crock pot instructions anyway, so feel free to make these whichever way works best for you!

1. White Chicken Chili

I came across this recipe while browsing Pinterest, and it's definitely a new fave! The author of this recipe recommends crock pot cooking, but I found this to be just as easy in my dutch oven. When I made this recipe, I omitted the coconut milk AND the cornstarch simply because I ran out of time (#momlife) so definitely don't forget those steps if you want a more creamy result. 

2. Chicken Noodle Soup

This is one of the easiest soups to whip together! I usually make this using leftovers from a whole, roasted chicken, but you can also use a rotisserie chicken and this will be JUST as tasty. Speaking of which, since Amazon bought out Whole Foods, their organic rotisserie chickens are now just $9.99!

3. Sausage and Kale Soup

I love this soup so much. Trisha's recipe calls for chorizo, but if you're having a hard time finding it (or don't like it), I use these spicy turkey sausages, removed from the casing. It's SO. GOOD.

4. "Accidentally Awesome" Vegan Chili

Don't let the v-word scare you away from trying this recipe! I've made this with ground beef and it is JUST as good with or without it. "Accidentally Awesome" is the perfect way to describe it. You just need to try it, and you'll know.
5. Creamy Potato Soup

This recipe is one I adapted from a family recipe my mother-in-law shared with me when my husband and I were first married. This recipe has been sitting in my cabinet since last winter and reading it again is practically making me drool. It's not exactly the healthiest soup, but if you're like me, you'll want to eat the entire pot-full.
