Weekly Meal Plan 2/26 - 3/4


       I'm just a tad behind on this weeks blogging schedule, obviously since my goal for these weekly posts is to put them up on Monday. Ah, you can forgive me, right? :) I feel like I'm constantly saying this exact sentence, but I cannot believe February is almost over already. January lasted a literal eternity (okay, not literal, but you know), and now we're about to be in March in just a few short days. Not to mention Ezra will be turning 8 months old - now THAT I literally cannot believe! It's so strange how time seems to move faster and faster as the months and years go on. I remember when I felt like my high-school years lasted an eternity, then college went by a little quicker, and the clock keeps on ticking. Anyway, I came up with some yummy breakfast, lunch and dinner ideas this week as we leave February behind.
       I think I may have mentioned this in my last meal planning post, but I've started coming up with some breakfast and lunch "rotation" meals instead of trying to plan exactly what I'm going to eat for every single day. Because frankly, I hardly EVER follow that aspect of my own plan. I'm always just eating whatever I feel like for breakfast and lunch. But, having a rotating selection allows me some freedom, while still giving me some structure while I'm at the grocery store, so I don't go crazy buying a million options (which isn't hard to do, especially at Trader Joe's...). I've broken it down below:
Meal Plan Easy Weekly Dinner Plan




FEBRUARY 26 - MARCH 4, 2018
BREAKFAST OPTIONS:

1. Avocado Toast w/  Fried Egg

Recipe Tip: I've got to be real honest for a sec and confess that I'm not the biggest fan of avocado toast, BUT. I like toast, and I like avocado, so this week I wanted to figure out a way to combine the two and still enjoy it for breakfast, since I always want to start my day off on the right foot with something really nutrient-dense. My avocado toast game-changer? SRIRACHA. If you haven't tried it, just trust me, and give it a try. 

2. Smoothie (Fruit & Greens)

3. Trader Joe's Peanut Butter Protein Granola w/ Almond Milk & Banana

Recipe Tip: Usually for smoothies I add whatever fruit I want (normally blueberries but sometimes strawberries & pineapple mix), crushed ice, and a big handful of spinach. Then I'll add chia seeds or flax meal, and usually one date for some added sweetness. Since dairy seems to upset Ezra's stomach, I've been using almond milk or coconut water in my smoothies, then I blend it all together! Adding protein and greens to your smoothie is a great way to get a boost of nutrients, but be warned that smoothies can also pack a lot of sugar! One thing I try to do is buy frozen fruit that is clearly labeled no added sugar, and also unsweetened almond milk and coconut water.

DINNER MENU:


TUESDAY FEB. 27 - One-Pan Roasted Italian Sausage & Veggies



WEDNESDAY FEB. 28 - Minestrone Soup by The Cozy Apron - I'm going to make this recipe without the meatballs! I didn't want to spend time making my own & my husband is allergic to an ingredient in most store-bought meatballs (so random, I know)

THURSDAY MAR. 1 - Beef Stew


SATURDAY MAR. 3 - Chicken Fajitas

SUNDAY MAR. 4 - Baked Salmond w/ Roasted Green Beans & Potatoes


     I am legitimately laughing out loud at myself as I type this, because we eat SO MANY of the same meals every single week. We have some sort of baked fish at least once a week, and same with the Italian sausage and veggies meal. Jack could eat that every day for the rest of his life if he had to, with zero complaints. What can I say, I love to cook but I also love to stick with what I know. If it's delicious and easy, it's probably on our menu every single week, haha. 

    Over the next couple of weeks, I've challenged myself to lower my grocery budget and plan a week of delicious and healthy meals, all while staying within a strict budget. Of course I'll be sharing all of this on the blog, but I just wanted to give you a little sneak peek about what to expect in the coming weeks as far as meal plans go. Somewhere in the last year or so, our grocery budget has been a little bit out of whack. I'm looking forward to the challenge of staying within a much smaller budget! As always, I'm hoping you can glean some information AND inspiration from my meal planning posts!
