Valentines Day Recipe: Delicious Strawberry & Cream Cheese Crepes

       I know it’s SO cliché, but when I think of Valentine’s day I think of romance, and when I think romance I think Paris. So what better way to start the most romantic day of the year than with some crepes?  The truth is, I’ll find any excuse to make this amazing recipe! I mentioned that you could start your day with these crepes, but they don’t just make a great breakfast, you can have them for dessert as well. If we’re being completely honest, I’ve even eaten them for dinner a time or two, because #adulting! And I KNOW crepes can seem kind of intimidating to make. Believe me, I’ve only just recently discovered how easy it actually is! Trust me, as long has you have a good nonstick pan anyone can make crepes, and I’m here to walk you through it step-by-step! So let’s get started.

    The first time I tried making crepes was when I saw a recipe posted by Anne at Recipes For Every Soul. Since then, I have tried many different variations of similar recipes, and created my own version. I do owe her a lot of credit for this recipe though, and wanted to be sure to give her credit!

       For the Strawberry Sauce
Chop 8 oz of strawberries into bite size chunks. Place in a wide bottom pan with 1 tbs lemon juice, 2 cups of sugar and a pinch of sauce. Bring to a boil and continue boiling for 3-4 minutes until the sauce is the consistency of maple syrup. Remove from heat and cool. Store in a plastic or glass container.


      For the Cream Cheese Filling
Before starting the filling, leave your cream cheese and butter out for an hour or two so it can come to room temperature. Trust me, it NEEDS to be room temperature or it will not blend right.
In bowl of stand mixer, or with a hand mixer, beat ¼ cup of butter and 8 oz of cream cheese on high for one minute. Add 1 ½ cups powdered sugar, 1 tsp vanilla, and ¼ teaspoon of salt and mix on high for another minute. Store in a plastic container.


     For the Crepes
In a medium mixing bowl beat two eggs, then add 1 ½ cups of milk, 2 teaspoons of vanilla, ¼ teaspoon of salt, 2 tablespoons of melted butter (cooled) 2 tablespoons of sugar, and 1 cup of all-purpose flour (sifted.) Mix until there are no more lumps.
Heat an 8 inch pan over medium heat and use a cold stick of butter to coat the pan so the crepes won’t stick. If you have a smaller pan that’s fine, just use less batter. Pour in a ¼ cup of batter and move the pan around in a circle to coat the bottom of the pan with batter.

Let it cook for 2-3 minutes until the batter is no long runny and bubbles start to form. Using a spatula, lift the edges of the crepe, then carefully wiggle the spatula under the crepe and flip.


Continue cooking for another minute on the other side. Put it on a plate to cool while you finish the rest of the crepes.

Fill with the cream cheese filling, roll and top with strawberries.

Yield: 5-8 crepes

Strawberries and Creme Crepes

ingredients:

Strawberry Sauce

  • 1 1/2 cup milk
  • 1 cup flour
  • 1 tbs sugar
  • 1/4 tsp salt
  • 2 tsp vanilla
  • 3 tbs melted butter (cooled)
